COURSE ONE:  Potage St. Germain (pea soup w/bacon lardon, crouton, crème fraiche)

COURSE TWO:  Beet & Blue Cheese Napoleon (pears, beets, blue cheese, arugula, toasted walnuts)

COURSE THREE:  Fried Clams (w/spicy remoulade & whole-tomato cocktail sauce)

COURSE FOUR:  Duck Confit (w/lentils Provençal, ratatouille, & red wine demi glace)
